    Every Recipe is AMAZING so far!
    We’ve just turned to a plant based eating style for health reasons and it’s very difficult to find a cookbook you can trust. Most have 3 good recipes and the rest are crap. I chose this cookbook solely because it came from America’s Test Kitchen and they’ve never let me down in the past. I can confidently say that they still have never let me down! I went through the recipes upon receipt of the book to mark the ones I was interested in. There were so many, I only marked the few I was not interested in. Seriously, there are maybe 10. I was shocked! We’ve tried 10 or so recipes so far and not come across a single one we didn’t like. Have we adjusted them for our personal taste preferences? Sure. I recommend this cookbook and hope they come out with others.

    Easy and delicious!!
    I have bought so many of these kinds of cookbooks and end up giving them away but this one is definitely a keeper! The recipes are simple and easy but packed with flavor!! I have made three of the soups so far and they were a huge hit. They give you ingredient substitution ideas too in case you don’t have something. Really recommend!!!

    Creative and Reliable Recipes
    I am a vegetarian, not a vegan, so I have been using real dairy products instead of plant-based dairy. Thus far, I’ve made the following recipes from this cookbook:Sun-Dried Tomato & White Bean Soup: It was okay. I’d give it 7/10.Hearts of Palm Ceviche: Also okay. I like the parts, but together they were not greater than the sum of the parts. I’d give it 7.75/10Citrusy Jackfruit Tacos: I’d previously tried pre-cooked jackfruit sold in the refrigerator section and thought I did not like jackfruit. I was wrong. I just did not like poorly prepped jackfruit. I’d give this 9/10.Unstuffed Shells with Butternut Squash and Leeks: Wow! Did I make something this tasty?! I did! Amazing. 10/10Roasted Zucchini, Corn, and Tomato Salad: Good. Nothings especially exciting about it.Pros:+ They give ideas for how to bulk up smaller dishes into a meal.+ There is a pic for every dish+ Lots of ideas for substitutions, which is great for less confident cooks+ Nutritional information provided in the back for every recipeCons:- If you don’t like tofu/tempeh, you will eliminate a lot of recipes- It does not include reheating directions/stop here directions if you want to get a head start on your cooking for the week.

    Perfect Cookbook With Perfect Portion Size
    I just received this cookbook this week and already made two of the recipes – Skillet Roasted Garlic and Chickpea Soup (page 86-87) and the Rice Pudding (page 346 – 347). Both recipes were really easy to make and tasted terrific! Can’t wait to make more of the recipes.

    Great cookbook for 2!
    My first book arrived misprinted. Very easy to return and ask for a replacement. The replacement arrived quickly and did not have any issues.I wanted to get this book because it’s just the two of us and sometimes you just want a recipe that’s not going to have a bunch of leftovers.Everything in the book looks delicious. Lots of great pictures to go along with each recipe. I highly recommend.

    Not up to normal standards, usually the recipes are perfect
    I’ve made several of the dishes and they need some rework. The vindaloo is REALLY hot, it could get by with half the pepper, the chick pea and spinach called for way too little liquid. We made the spaghetti with artichoke and the basic flavors are good, I think adding chopped sun dried tomatoes would really punch it up. I’m not a vegan, so I will try adding some bay scallops to bump up the protein next time I make it.Just as an update:There were problems in the Kashmiri chili crop. A lot of it failed.Kashmiri should run about Scoville 1500, about the same as Ancho (different flavors).The Kashmiri I purchased would be about scoville 20,000. Not quite as hot as my cayenne pepper (30k low end), but still far too hot for the dish.

    Vegan Cookbook
    I already have one vegan cookbook from America’s Test Kitchen and love it. Then when I saw this cooking for two version, I had to have it. I’ve already tried several recipes and all are do-overs. We especially loved the Taco Salad recipe. My husband has a big appetite and, so far, the recipes for two are still enough for he and I. We only went vegan about three months ago so this book is helpful with the new way of cooking and eating. I would recommend this book.
