COOKIES ’N’ CREAM COCONUT ICE CREAM RECIPE
Makes 10 servings | Prep Time: 25 minutes
If there’s one thing that gets me off my routine, it’s ice cream. I love it! That’s why I created this recipe, so I can enjoy ice cream all the time without sacrificing how I feel, my health, or the way I look. This coconut milk ice cream is actually quite healthful, but shhhh . . . no one will know!
Ingredients
One 13.5-ounce can full-fat coconut milk3 frozen bananas or 1⁄2 cup coconut sugarPinch of sea salt1 tablespoon vanilla extract10 store-bought organic chocolate cookies, broken into pieces Directions
Combine all the ingredients except the cookies in a blender and blend until smooth.Pour the mixture into an ice cream machine and turn it on.Mix for at least 20 minutes or until ice cream is formed.Stir in the chopped cookies. This dessert is best served immediately.

Great Information and Recipes
Because I have been following The Food Babe for several years, a lot of the advice she shares is repetitive information. However, I am so glad that she put so much good advice into her cookbook. If I had not previously been a follower of hers, this book would be everything I needed to get me on the right path in the kitchen.Her recipes are so simple, and use simple ingredients. I love this! Especially for people that are either new to clean eating, extremely busy, or don’t love to cook. These recipes are easy to prepare and delicious. They may not be gourmet, but there isn’t much of that in my house, anyway! I appreciate her down to earth recipes and the personal touch that she adds on every page.I highly recommend this book to those that are in search of healthy recipes, but also advice on how to grocery shop and get your kitchen “cleaned up!”

I ordered this book as “Used-Good Condition”. I paid a fraction of what the cost for a new one is and was so surprised when I received my copy…it is literally brand new! I love a bargain!PRO: This cookbook has a good variety of foods and recipes that take minimal time to prepare. I also appreciate the ingredient lists. They are not terribly long or chocked full of pricey and obscure ingredients that I’d never use on a regular basis.CON: If your kitchen is anything like mine, most things used to cook with are pretty mainstream. With that being said, in order to make healthier meals, a commitment has to be made which comes at a cost, i.e., monetarily to replace them with healthier options. However, at the end of the day, I’m happy to do so for peace of mind! Knowing the food being fed to the family isnt toxic garbage makes me happy and excited for a healthier lifestyle.

The recipes that I have tried are all great. In addition, it is great to have the detailed history and information regarding the problems with our food choices in one book. It is a reminder and motivation of why we must make changes – this book gives one the tools to start or to continue on the journey.

I purchased Vanni’s new book Food Babe Kitchen, and it’s beautiful! The cover and the pictures inside are bright and colorful. I recenty made Almond Butter Freezer Fudge, (I cheated w/ choc.Chips), it was delish! The recipes are easy to follow and I can’t wait to try them, especially the Acai Berry Bowl! I’ve been wanting to get a recipe for this kind of breakfast/ healthy snack. I can’t wait to make this. I learned alot from the meet up group of Weston A. Price Foundation, but these are so much easier and just as healthy! Thank you Vani Hari, you are awesome! Your child is so cute, full of health and beauty. 🤩 Denise D.

Like so many who’ve followed you Vani over the last few years, & learned from you, I too praise you for your hard work in bringing us truth in the vast world of enriching our bodies well. This is the 3rd book I’ve purchased from you; I look forward to devouring & utilizing the contents of this one too (not literally, of course!). From the get-go in Food Babe Kitchen, I like the concise & well laid out repetition of what you taught us in your first two books, so it’s all in one spot here. This book flows so nicely with beautiful pictures, great explanations, and especially, a chance to see Harley. I’m away from home right now, so haven’t had a chance to try any recipes, but the pages marked to try as soon as I can do so are waiting for me.
