    Always dependable with well written recipes
    Like all ATK books the recipes are dependable. I haven’t tried the new crust recipe yet but I will. I was surprised that they didn’t include a basic pie crust recipe that doesn’t need a food processor but I have one so that’s fine. My only big surprise and it has been a surprise in all their recent baking books is that they do not provide measurements in grams. They are so precise about everything else. If you are going to suggest that people have a scale why not include grams? It’s so much more accurate and all of the newer baking books like King Arthur and those written by pastry chefs provide those measurements. Lots of good tips for success in this book and I’m reading all the techniques before I jump in on my next fruit pie. Very good for beginners and even though I have baked a lot of pies I have already picked up a lot of new tips. Also not just the old favorites. They have included some interesting flavors and ingredients and I liked the idea of adding some favorings to the basic butter crust.

    This is a great book. Best crust I ever made. Brought the blueberry pie for Xmas family dinner and got rave reviews. I can’t wait to test all the recipes.

    Must have for all pie bakers!
    This cookbook is full of a variety of delicious recipes. With classic pies like apple and French silk to icebox pies and tartlets, this is definitely a must have for any baker. My favorite so far is the Summer Berry Pie! Perfect dessert for a hot summer day!

    This is a beautiful cookbook with beautiful illustrations. The only downside is that the recipes are quite complicated with numerous steps.

    In-depth, comprehensive and clear
    I have very much enjoyed the other two books in this series (Cake and Cookies) and this is proving to be just as helpful and enjoyable as the others. In addition to some fantastic recipes, the book provides an excellent grounding in the ‘why’ and ‘how’ for all sorts of pie techniques. Add to that excellent illustrations, and this is a book that deserves a spot on any bakers shelf regardless of their skill or experience level.All three volumes in this series are ones that I use almost every time I bake, and are also great to just read to learn about techniques. I would have loved to be able to get all three volumes in the series in a boxed set. Would have made a great gift item.Five solid stars — an excellent cookbook.

    The Perfect Pie
    This is the perfect pie cookbook. There’s such a nice variety of recipes, even ones rarely seen in other cookbooks. The layout is easy to follow while preparing the ingredients. I get a sense of what the final pie will look like. All of the pies look so appetizing in the photographs, as the pictures were so nicely done.
