Over four million air fryers were sold last year, which is ten times as many as were sold just two years before that. (Although my evidence for that last one is mostly anecdotal, I can say with certainty that men are seriously into the air fryer.) How to Use Your Air Fryer
An air fryer is essentially a small convection oven that gets hotter and moves air faster than other convection ovens. As a result, the air fryer cooks food quickly and does an excellent job of making the exterior dry, browned, and crispy while keeping the interior moist and juicy.
A Note on Salt
Salt is one of the most important ingredients in all of cooking. Whenever I call for salt in this book, I mean a coarse salt like kosher salt or coarse sea salt, not table salt, which is iodized to prevent clumping.
When using your air fryer, there are a few general principles to follow to ensure that you get deliciously consistent results: Don’t Overfill the Basket. Dry Batter, Not Wet. Use a Little Bit of Oil (But Not EVOO). Preheat. Don’t Overcook. Accessories.

Heavy Emphasis on International Cuisines
I have an air fryer that I use on occasion, not as often as I should or would like but often enough to justify its place in my kitchen. I am always on the lookout for collections of good recipes and ideas for making good things in my air fryer so I was pleased for the opportunity to try this book. It is a decent book with some good ideas in it, though there is a little room for improvement in the formatting.One thing that is mentioned in this book’s description but is not emphasized on the cover is the heavy influence of international flavors, in particular Latin American and Asian styles. This is not simply a collection of recipes with the occasional international dish; quite the opposite, dishes that would be classified as American cuisine seem to be in the minority. This is does not serve this book very well – if you’re looking for a good collection of international cuisines it is easy to blow past this book in the search. On the other hand, if you happen to be looking for a book that is geared more towards American cuisine this book could come as a shock. This isn’t a fault of the collection, but rather it is a marketing issue.There is something else I noticed that makes this book different from almost every other cookbook I have used. This one lists the directions for preparation, and then it lists the ingredient list at the end. This is the reverse from most books which list the ingredients up front and then spell out the directions. While it is not a problem, per se, it is a bit unsettling when not used to this presentation.Formatting and marketing aside, this is a very interesting collection. It covers a lot of ground, including breakfast (it has a recipe for egg in a basket, of all things), vegetarian dishes, main courses with various meats and even desserts. My family has already informed me that the Chocolate Chip Pan Cookie Sundae needs to be in the regular rotation in the house.This is a book that is geared towards the cook who likes to leave their comfort zone and try new flavors. It is likely that there are more cuisine types in this book than most people have tried to prepare already. If you really like international flavors and you want to enjoy them by using your air fryer, this is a good collection that is full of interesting ideas.

Questionable
Reading through the recipes, they mostly sound good, however I have found two that are simply incorrect. There is a recipe for gougere whose ingredients do not match up to every other gougere I have seen. All call for 1 cup liquid, 1 cup flour, half cup butter and 4 eggs. This recipe calls for only 2 eggs and it simply does not work as well as the standard ingredients. Her recipe for hush puppies is a disaster. I was looking forward to it as a way not to deep fry them in oil, but she neglected to add baking powder to the recipe so it turned out hush puppy pancakes. Given these, I am hesitant to try any of her other recipes.

I was amazed at how much you can actually do with an air fryer. I purchased this book for my parents who recently received an air fryer as a gift. I looked through the book before gifting it to them. I appreciate how there are so many diverse and simple recipes. There is a lot of trouble shooting and explanations on how and why a recipe will work. I didn’t see any recipes that I wouldn’t make for my family.

If you’re cookbooks are basic, this is a great addition
The recipes are spot-on delicious. Not your typical hotdog and meatloaf cookbook. But, by the same token, not so overly off the wall you won’t enjoy any of the dishes. Like the book says, “Elevate your air frying”. Some examples are the Monte Cristo sandwich, glazed chicken salad with mangoes and candied pecans, Sicilian stuffed peppers, fried okra, papas rellenas, asparagus with goat cheese frittatas, and who wouldn’t love chocolate chip pan cookie sundae. If you enjoy easy, a little off the menu items I highly recommend this book.

Creative while practical, international while useful for everyday cooking, Emily Paster’s “Epic Air Fryer Cookbook” is the go-to resource to use with that new Air Fryer. The writing style is welcoming and engaging for readers of varied levels of kitchen prowess and interest. The author is always honest, clear, and helpful about how best to select ingredients and prepare a wide range of appetizers, entrees, and desserts – noting which recipes might go well with others. I am so glad to have found this beautiful book.

For those well acquainted with their air fryer
I’m a newb when it comes to using an air fryer so I was looking for something somewhat basic that could help me become more comfortable and less intimidated of my air fryer.This cook book was a bit more advanced than what I was looking for but if you feel you are at an intermediate level with your air fryer and are beyond cooking your basic chicken, fish and simple meals this book is for you.It does have a really amazing variety of international meals and 100 recipes which guarantee you from not getting bored. From Confetti salmon burgers, crab Rangoon and Baja fish tacos, Turkish leek fritters, you will find something for everybody in this book.That being said all air dryers are not created equal and you should know and be comfortable with your air fryer before getting serious with this cookbook so you can make cooking adjustments as needed. Emily Pasteur does give you some quick tips and tricks about choosing an air fryer and how to use one but it felt more like a review than detailed instructions. I also wish I knew what air fryer she was using. Maybe she couldn’t publicize it in her book. She does mention using a toaster oven type air fryer. Which honestly not too sure what that looks like.There are many great photos if you are looking for some eye candy. This book looks interesting if you want to switch up your meals but if you are a beginner I don’t suggest it. I did make an amazing rotisserie chicken yesterday and that gives me hope that one day I will be ready for this book. If you’re looking for something a basic this isn’t it.

I got the book today , I haven’t use it yet , but I started to read through it and I found out some nice Spanish recipes that I can’t wait to try . My favourite food is Peruvian food and I found some nice recipes . I am attaching some pictures . The ingredients are not very difficult to find in shops just the yellow Peruvian hello chille . Ají amarillo that you buy in Latin shops in Melbourne
